littlemishelle's cooking adventures.

I cooked dinner again last night. It was a pretty simple recipe (managed to stuff it up a bit but it still turned out nice).

The recipe was for 'Green Pilau with Cashews'.

So basically you roast the cashews and put them aside. Get the some oil and spring onion up in the joint, cook it a little. Add brown rice and fennel seeds and cook until coated. Then you chuck in some lemon juice and vegetable stock, and let it boil. The cookbook told me to then pop the lid on and cook for 45 minutes. (which I did - timed exactly) It wasn't until after I'd eaten my dinner that it occurred to me that since I increased the amount of ingredients by 50% (to make a bulk batch) I should have cooked it for 50% longer. (explained why there was more liquid than anticipated - which has initially left me very confused) After this 45 minutes it said to remove from heat, add the spinach and herbs, put the lid back on for 8 minutes, after which time you fork it through. I ended up putting it back on the heat after that to try evaporate more of the liquid (which helped a bit). Basically in the picture (in the cookbook) it looked quite dry, whereas mine turned out more risotto-like. Was still tasty (and now I know for next time) and Mum and I enjoyed it anyway.

P.S This morning on our walk, Junaberry and I encountered our formed 'headmaster' [principal] pulling into the school car park as we were about to cross the road. As soon as Junaberry realised he was there she [unnaturally] turned to face the opposite direction. [who is this kid???!] He noticed us and waved. I waved back. Junaberry pretended to be very interested in the car park, and not notice. She was wearing sunnies and a hat, so maybe he couldn't tell it was her, but I secretly think he knows and is cut that his star student/dux ignored him. He will surely cry himself to sleep tonight.
